These pork rissoles are a proper comfort meal that’s simple, filling, and family-friendly. Juicy pork patties are gently bound with fresh breadcrumbs, egg, and cheese, then pan-fried until golden and served with a rich, peppery pan gravy made from the same skillet. It’s an old-school dinner that delivers big flavour without complicated steps.

Low-carb potatoes and pumpkin are partially microwaved to speed things up, then finished in the air fryer for crispy edges and fluffy centres. Steamed broccoli rounds out the plate with colour and freshness, making this a balanced, satisfying meal that works just as well midweek as it does for a relaxed weekend dinner.

Ingredients

  • 500 g pork mince
  • 2 slices low-carb bread
  • 2 eggs
  • ½ cup grated cheese
  • Salt, to taste
  • Cracked black pepper, generous
  • Low-carb potatoes, chopped
  • Pumpkin, chopped
  • Olive oil
  • ½ beef stock cube
  • Soy sauce
  • White vinegar
  • Cornflour
  • 1 head broccoli

Method

  1. Chop potatoes and pumpkin, toss with oil and seasoning, and microwave for 4-5 minutes.
  2. Transfer to air fryer and cook at 200 °C for 18 minutes, shaking halfway.
  3. Toast bread until dry and golden, then blitz into breadcrumbs.
  4. Mix pork mince, breadcrumbs, egg, cheese, salt, and pepper gently. Form patties.
  5. Pan-fry rissoles over medium-high heat until browned and cooked through. Remove and keep warm.
  6. Discard burnt bits on pan, then deglaze with 100 ml water.
  7. Add stock cube, 1 cap soy, ½ cap vinegar, and pepper.
  8. Stir in cornflour slurry, increase heat, and thicken gravy.
  9. Steam broccoli in the microwave for 2½–3 minutes.
  10. Serve rissoles with gravy, roast veg, and broccoli.
