These home-made luxury pork burgers are all about simple ingredients done well, with a lighter, lower-carb approach that doesn’t sacrifice flavour. Lean pork mince is combined with low-carb breadcrumbs, egg, salt, and plenty of cracked black pepper to create a juicy, well-seasoned patty that holds together beautifully when cooked. Pan-fried until golden on the outside and tender inside, the burgers develop a savoury crust while staying moist.

Low-carb bread is lightly toasted for warmth and structure, then layered with classic burger fillings. Crisp lettuce adds freshness, while beetroot brings sweetness and colour. A sunny-side-up egg adds richness, with the yolk creating a natural sauce when cut into. Melted cheese finishes the burger, adding creaminess and depth.

Finished simply with a swirl of lmayonnaise and a small swirl of tomato sauce, both spread on the top slice of bread before placing, these burgers strike a great balance between indulgent and familiar without overdoing the sauces.

This is a great BBQ meal cooked on a large hotplate.

Ingredients

  • 500 g lean pork mince
  • 2 slices low-carb bread, toasted and blitzed into crumbs
  • Eggs, one for each burger plus one for the patties
  • Shortcut bacon, 1 slice per burger
  • Salt, to taste
  • Cracked black pepper (generous)
  • Low-carb bread, sliced and lightly toasted
  • Butter, for bread
  • Cheese slices
  • Lettuce
  • Beetroot slices
  • Tomato slices (optional)
  • Red onion or spring onion, sliced
  • Mayonnaise
  • Tomato sauce

Method

  1. Toast low-carb bread until dry and lightly golden, then blitz into breadcrumbs.
  2. In a bowl, combine pork mince, breadcrumbs, egg, salt, and plenty of cracked black pepper. Mix gently until just combined and form into even patties.
  3. Heat a pan over medium-high heat and cook patties until well browned and cooked through. Add cheese during the final minute to melt.
  4. Lightly toast low-carb bread and butter the cut sides.
  5. Pan-fry bacon and eggs sunny-side up.
  6. Assemble burgers: place lettuce on the bread base, followed by pork patty, cheese, bacon, egg, beetroot, onion, and tomato if using. Spread a swirl of mayonnaise and a small swirl of tomato sauce on the top slice of bread, then place on top to finish.
  7. Top with the remaining slice of bread and serve immediately.
  8. Salad items can be varied to taste.

Pro tip: For juicier patties, rest them in the fridge for 10 minutes before cooking and press a slight thumb-print indent into the centre of each patty.

  • Extra cracked black pepper or chilli flakes
  • Mix a pinch of salt and a squeeze of lemon into Greek yoghurt for extra flavour
  • Serve open-style on one slice of low-carb bread
