Ingredients

  • 500 g chunky beef pieces
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Olive oil, for cooking
  • 1 × 1 kg bag frozen mixed vegetables
  • 1 x egg
  • 1 beef stock cube
  • 4 measured teaspoons cornflour
  • 2 caps soy
  • 1 cap vinegar
  • 1 gravy mix
  • 1 sheet puff pastry or as required to cover mix
  • Olive oil spray or melted butter (for pastry)

Method

  1. Preheat oven to 180 °C.
  2. Heat olive oil in an oven-safe pan over medium heat. Cook onion and garlic until softened.
  3. Add beef pieces and brown well on all sides.
  4. Add frozen mixed vegetables and stir to combine.
  5. Dissolve the beef stock cube, cornflour, and gravy mix in cold water and pour into the pan until the beef and vegetables are mostly covered (about 2 cups).
  6. Simmer for 10 minutes.
  7. Remove pan from heat. Lay puff pastry over the filling (tucking in the edges for easier serving).
  8. Brush with beaten egg and add cracked pepper.
  9. Bake for 10 minutes, sprinkle with cheese, then bake for 5-10 minutes or until pastry is puffed and cheese is golden brown.
