Sang choy bow is a fresh, flavour-packed dish that delivers big taste with minimal effort. Savoury minced meat is cooked quickly with garlic, ginger, and classic Asian sauces, then spooned into crisp lettuce cups for a light yet satisfying meal. The contrast between hot, glossy mince and cool, crunchy lettuce makes this dish especially appealing, while the simple ingredient list keeps it easy enough for weeknights.

Naturally low in carbohydrates and high in protein, sang choy bow is a great option for casual dinners, entertaining, or when you want something lighter without sacrificing flavour.

Ingredients

  • Ingredients (serves 3–4)
  • 500 g pork mince (chicken works just as well)
  • 1 tbsp oil
  • 2 cloves garlic, finely chopped
  • 1 tsp fresh ginger, grated (or ½ tsp ground)
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1–2 tsp sweet chilli sauce (optional but excellent)
  • 2 spring onions, sliced
  • Iceberg or cos lettuce leaves, separated

Method

  1. Heat oil in a hot pan.
  2. Add garlic and ginger, cook 20–30 seconds until fragrant.
  3. Add mince and cook on high heat, breaking it up until browned.
  4. Stir through soy sauce, oyster sauce, sesame oil, and sweet chilli.
  5. Cook another 1–2 minutes until glossy and well coated.
  6. Turn off heat and stir through spring onions.

Pro tip: Cook the mince on high heat and don’t stir too early. Let it brown properly before breaking it up, this creates deeper savoury flavour and avoids a wet, steamed texture. Add sesame oil right at the end so its aroma stays fresh and punchy.
