This roast tomato soup is rich, simple, and deeply comforting, built around the intense flavour of oven-roasted tomatoes. Roasting the tomatoes until blistered and lightly charred concentrates their natural sweetness, while garlic softens and caramelises to add depth without harshness. Blended smooth and gently simmered, the soup develops a mellow, rounded flavour that needs very little embellishment.

Finished with a swirl of thickened cream or a dollop of sour cream and plenty of cracked black pepper, this soup is warming, satisfying, and quietly elegant. It’s proof that great flavour comes from good ingredients, proper seasoning, and time.

Ingredients

  • 1 kg truss tomatoes
  • 2-3 cloves garlic, unpeeled
  • 1 onion, halved or thickly sliced
  • Basil leaves (optional)
  • Olive oil
  • Salt and cracked black pepper
  • Thickened cream or sour cream, to serve

Method

  1. Pre-heat oven to 200 °C.
  2. Place tomatoes, garlic cloves and onion on a lined tray. Drizzle generously with olive oil and season well with salt and cracked black pepper.
  3. Roast for 35-45 minutes, turning once if needed, until tomatoes are soft and blistered with some charred spots.
  4. Squeeze garlic from skins and transfer everything to a large saucepan.
  5. Blend until smooth using a stick blender or blender.
  6. Optional: add a small handful of basil leaves when blending.
  7. Cook the soup over medium heat for 25-30 minutes, stirring occasionally, to deepen flavour and mellow acidity.
  8. Add generous amount of cracked black pepper.
  9. Taste and adjust seasoning.
  10. Optional: add the tomato truss vines to the pot while simmering to enhance tomato aroma. Remove before serving.
  11. While simmering, add a small amount of water as needed to reach your preferred soup consistency.
  12. Serve hot with a swirl of cream or a dollop of sour cream and extra cracked black pepper.

Pro tip: Don’t be afraid of a little char on the tomatoes, those dark spots add depth and richness to the finished soup.
